Noni vinegar is a true display of alchemy. The fruit itself is well known as the worst tasting in the world, but through the fermentation process it transforms its personality into something lovely and delightful. 

Unexpected beauty. 

When I first suggested noni vinegar, he thought it was crazy! And to this day he loves that his first instinct was proven wrong, it really reminds us to be open to everything. 

There are a ton of noni trees all over Hawaii Island, especially Kailua Kona, and since we take our ques from the abundance, noni vinegar destined to be discovered. Dare I say, this is our all time favorite fruit to brew with?! The resulting flavor has the essence of noni but the funk is completely gone. It actually is wonderfully delicious. Even people who have never smelled or tasted a fresh noni, know nothing of its lore, find this vinegar to be one of the best. 

Now for having such a smelly reputation, the health benefits are on the opposite spectrum, they are spectacular. This is one of the most nutritious, medicinal and healing fruits on the planet. This is the reason there are so many of them found in Hawaii, the Polynesians brought them over on the canoes. It is known as a "canoe fruit". These were brought over for their medicinal properties. The leaves, the roots and the fruit all have unique benefits.

The umami richness is unlike anything we have ever tasted. Like the 95 year old man once said to us "wow, flavors I have never had!" this embodies that novelty. It is almost as if it has the essence of a 30 year aged cheese or a wine that has been growing old in a cave somewhere. It tastes as if it was more than just a simple vinegar fermentation. Flavors that really only come from depth and time. The noni itself already embodies something so funky that it really should not have been a surprise that the vinegar would be so wonderful. 

Alchemy is the seemingly magical process of transformation, creation, or combination. Noni vinegar meets the definition.
