This type of wild sea salt forms on the lava rocks when the conditions are just right. When bigger waves splash up onto the surface and the sun is shining long enough for the puddle to evaporate, there will be salt! If the waves are too big then the water will never get an opportunity to evaporate so the conditions must be just right. It is unpredictable and we often go to our salt spots weeks on end with no luck. We collect as much as we can when it is there.
This type of sea salt is 100% processed by nature, unlike most sea salts in stores which are industrially processed from ocean water. The crystals form on the surface of the puddle creating giant sheets that can be picked up in large pieces. The ocean water must reach 26% salinity via evaporation before the salt starts to form, once it hits that sweet spot the salt crystals form rather quickly.
In France, this type of salt is highly sought after and referred to as "fleur de sel". It offers benefits like being less refined with more trace minerals (magnesium, calcium, potassium) than table salt, supporting electrolyte balance, and aiding digestion, but its primary advantage is flavor, allowing you to use less salt overall for a better culinary experience, as it's best used as a finishing salt to preserve its texture and taste. It's unprocessed, lacking additives, and its unique crunch and slow dissolve enhance dishes, making it a premium, natural seasoning. It is flaky and beautiful.
