Mango Lassi

This vinegar was inspired by our travels in India drinking the yogurt based lassi beverages that are common all over India. We particularly love the lassi versions with mango and created a vinegar in an ode to the beverage. We inoculated a mango honey wine with a homemade yogurt strain to create this lovely mango and honey forward vinegar. The base of the vinegar was honey wash from our friends and regenerative bee keepers the “Bee Boys” and the mangoes were off our common tree on our property.
