Don't underestimate the power of cacao shells! In the process of making chocolate, cacao nibs are roasted and then the outer shells are removed from the nibs before grinding the nibs down to make into chocolate. We love utilizing ingredients that would otherwise go to waste and thats exactly wht we did here with a local chocolate maker gifting us her unused shells. Some chocolate companies offer the shells in the form of cacao shell tea but in our case, we infuse the shells into vinegar creating our own version of cacao tea vinegar. The shells themselves are extremely high in fiber and rich in polyphenols, especially flavanols. They are also rich in magnesium, potassium, calcium, and iron while also containing small amounts of caffeine and higher amounts of theobromine. This nutraceutical also packs a serious flavor punch imparting earthy and chocolatey notes to the mango vinegar that we used for the infusion. We are in love with all things cacao and the high nutritional profile of the shells as well as the rich flavors it brings to the party makes this vinegar one of our favorites!
