🌸 Overview

Have you ever had a rose apple? We didn't even know this fruit existed until we saw a funny looking guava in our  neighborhood and tried to bite into it. We were shocked how floral and tasty it was - turns out it was a rose apple!  WOWWWWW, this fruit is just something else. They really do taste like roses, are sweet and also kind of crunchy. 

We ended up harvesting this tree two seasons in a row so this is actually our 2nd batch of rose apple vinegar but this time we infused it with Citra Hops.

🌺 Story Behind the Batch

The whole reason we started brewing vinegar was because Shannon had become infatuated with spontaneous farm house ales. He had just began his liquid fermentation journey and became obsessed. I'm talking this man bought at least 15 beer books, listed to every nerdy podcast you could possibly imagine.. when he wants to learn something, he goes deep. That is what everyone loves about him! 

We learned that alcohol fermentation had a rich history and that women and monks used to be the brewers. They used their intuition about which herbs and spices to use. Their brews were not just for the buzz, they were medicinal. This inspired us, but we didn't know at the time what our future held, that vinegar would be a conduit to play with all the plant medicine... that we would become like those historic women and monks. Listening to nature and following her lead. 

So that said, the essential oils in hops (myrcene, humulene, and caryophyllene) give IPAs that tropical citrus note. But what we find really cool is that the compounds in the hops have an antibacterial and preservative quality, similar to acidic acid in a way. So back in the day, these intuitive creators discovered that the hops were a preservative, this was important because refrigeration did not exist. Honestly, it inspires us to create in away that everything we eat does not need modern day equipment to make it safe. Like in SE Asia much of their meat is butchered that morning, sold that day, eaten that day.. thus no refrigeration - fresh as can be. Perhaps we could learn a thing or two?

Before hops, the brewers used a mix of yarrow and other botanicals - so you see, there are a million different ways to preserve and create. That is the beauty of vinegar too - there are no limits. 

Okay so long story short, we have hops on hand because Shannon still likes to brew beer and we thought it would be fun to infuse this floral rose apple vinegar with Citra Hops.

🍽️ How to Use It

  • Ceviche, poke, you name it - bright and fresh
