🌸 Overview
Bananas are one of the most common fruits to make vinegar from! Before apples, bananas were one of the OGs. You may think it is going to taste like bananas but it absolutely does not! In fact, you can hardly identify a banana vinegar having started form bananas. Fruit fermentation is true alchemy.
And as for the 5 spice, we are blessed with all the tropical spices here in Hawaii. We have friends with clove, all spice and cinnamon trees!

🌺 Story Behind the Batch
5 Spice Banana Liquor turned vinegar!! BATCH 2 -- we recreated this combo because it is soooo freakin delicious.
The first batch, we had specifically made a potent 5 spice banana wine to distill into liquor but our beautiful copper distiller is leaking steam 💨 (we tried lots of tape and even sourdough starter - open to trouble shooting suggestions if you have them!!). So naturally we turned it into vinegar!! You know... in the name of zero waste.
We made 24 bottles and the first 12 have sold themselves in less than 12 hours. We are aiming to sell this out in less than 24 hours. Honestly, that's the dream, you guys can help hold that vision for us. The goal is that every time we share a new batch they just get snatched up right away... you know Jester King Brewery style. Even with our expansion plans, our batches will remain small and artisan.
This is vinegar is not sweet but the spices almost trick your taste buds into thinking it is! So cool. The spices are warming and perfect for fall whether. You can go Asian dipping sauce style or put this over some pumpkin bread. Vinegar is so versatile, we love it. It is just an excuse to create.
