While our Water vinegars are for fine usage, The Cooking Line is built for heat, heart, and the heavy lifting of a savory kitchen. The Vibe: Built for Fire

These vinegars feature our favorite fruits and are considered pure vinegar ready for any addition. Its a blurry line between fine vinegar and cooking vinegar, but we wanted to put some sort of boundary so we all know which ones to cook with and which ones to reserve for finishing. Just keep in mind, the overlap is so big that its really hard to classify so don't let us tell you what to do with your vinegar! As long as its not a garlic vinegar sauce, you can easily use your base vinegar in your hair or water. There really are no rules. 

The Boundary: Finish vs. Fire

Some of our vinegars are almost too fine for the frying pan. Our Rambutan Vanilla ($60) is a "Finisher"—best saved for fruit, desserts, or sipping. In contrast, our Pomegranate is the ultimate hybrid: delicate enough for water, but robust enough to deglaze a pan or make a killer dipping sauce.

Quick Tip: The Salty Test

If your bottle contains garlic, sea salt, or whole chilies, it belongs in the pan or on the plate and is considered part of our Fermented Sauce Line. These are built to be the "Flavor Foundation" of your meal. Treat it like a hot sauce. Keep them away from your scalp and your smoothie!
