We much prefer a vibrant vinegar based pesto over an oily one! Since we usually eat it with bread, its the perfect compliment for digestion and blood sugar spike mitigation. Its bright and fresh and really lets the basil shine.
Vinegar Pesto:
1 cup basil
1/2 cup of any of our fruit vinegars
1/2 salt (or to taste)
2 cloves fresh or black garlic
This pesto goes wonderfully on sandwiches, over steaks, chicken, eggs, you name it!
