Fermented ramen noodles!! Not sure about you all, but when we eat a big bowl of ramen we can get a little lethargic afterwards.
Sourdough fermentation produces lactic acids, which slows down the digestion and absorption of carbohydrates, thus a steady blood sugar rise!
Throw some vinegar which also reduces blood sugar spikes via acidic acid and now we’re talking ultra stable glucose levels! We enjoyed this bowl with our Black Magic vinegar.

So get outside and ferment your carbs if you wanna anti-age
Recipe:
500g all purpose flour
200g water
20g potassium carbonate (lye water) known as kansui in Japanese -- feel free to tinker with the quantity
25g of sourdough starter (not much because we want to keep the integrity of the hydration but just enough to inoculate fermentation)
10g salt
1. Mix all the ingredients by hand or in a mixer, this is a very dry dough so mix until all the flour has been hydrated (it wont look like a normal bread dough)
2. Let it sit in a plastic bag to fully hydrate for 15 min or so and then stop on it to really mix the dough
2. Let the dough rest at room temperature for 8 hours. OR you can let it rest for a few hours then put it in the fridge to use over the next few days.
3. Have a large pot of water boiling before you start the next steps.
4. Roll out the dough using a rolling pin, does not need to be super thin before running through the noodle setting on the pasta machine
5. Alternatively, you could run it through the flat noodle sheeter first, then through the noodle setting if you prefer - play around with it!
5. Immediately after the noodles are cut, place them in the boiling water for about 5 minutes
6. Rinse the noodles in cool running water to seize the cooking
There are many ways to eat ramen! We like dry noodles with a sauce or a formal ramen broth. You can even crisp them up on the skillet for a fun alternative. Dan dan style to stir fry. There is no wrong way to eat ramen noodles.
