Smashed Cucumber Salad

This smashed cucumber salad is a fresh, crunchy, flavor packed delight!

Smashing the cucumbers and tossing them in salt allows the natural water to release and thus the sauce added later to have a more powerful punch. 

Ingredients:
2 large cucumbers
1 tbs Black Garlic Vinegar (can be substituted with extra fruit vinegar)
2 tbs Jaboticaba Star Anise Vinegar (can be substituted for any of our vinegars)
2 tbs chili oil/crisp (or can use sesame oil with chopped chilis and garlic)
1 tsp soy sauce
1 tsp sea salt 
1. Smash your cucumbers! This step is fun :)
2. Chop them into bite size chunks in whatever form you like
3. Toss the cucumbers with the 1 tsp of salt and let them strain for about 30 min then really shake the water off before you add your sauce
4. Toss the cucumbers with the vinegar, chili crisp (or sub a little sesame oil, garlic and chili) and soy sauce (can add more soy if the salt from the initial soak didn't leave it seasoned enough).
And enjoy!! This is the perfect little appetizer to start a meal because the vinegar and the fiber in the cucumbers will help you with any pending blood sugar spikes!
