Pomelo Papaya Salad

This salad can be made with several variations, for instance if you do not have a pomelo you can try a grapefruit, if no green papaya try green cabbage. If you are allergic to peanuts, fry a different nut. If you do not have lime leaves, try lemongrass. The purpose of this recipe is to inspire you to create a beautiful Vietnamese style salad with ingredients that you have available. 

Salad:
2 part thinly sliced purple cabbage
1 part shredded green papaya or green cabbage
1 part pomelo or grapefruit
1/2 part shredded carrot
Toppings:
Fried peanuts, lime leaf or lemongrass, and turmeric 
*Fry all together, strain the oil, the place over the top of the mixed salad

 

Sauce: 
1 part Sour Flower Vinegar (Mango, Guava, Jackfruit, any of our fruity plain ones work great here!)
1 part fish sauce
1 part honey or sugar
1 part water
garlic and chilis

The key here is to have thinly sliced cabbage, try using a mandolin for consistency. To get the cabbage to have a nice pinkish color you can splash some salt and vinegar on it and give it a little massage, then strain the liquid before you add the papaya, pomelo and carrot. Toss the salad ingredients then top with fried peanuts, lime leave and turmeric.
