The key to this cookie is to get creative! Feel free to substitute any local ingredient to make it custom to where you live.
For example, if we were in Texas we would use pecans instead of mac nuts!
Ingredients:
1 cup shredded coconut
1/2 cup macadamia nuts
1/2 cup peanuts
3 tbs honey
1 egg
1 bar of Kona chocolate
1. Set your oven to 325F
2. Toss all the ingredients together in a bowl (the chocolate can be dipped after the cookies are ready or you can do chocolate chunks)
3. On a parchment lined baking sheet, portion out about 1/4 cup and shape into a round cookie, baking will bind everything, this is a very loose "dough"
4. If you went for chocolate dip, heat your chocolate using a double boiler and be very careful not to get any water in it. You may want to google some tips for this! Then dip your cookies and let cool
