Turns out we have bundles of medicinal botanicals growing right above our heads! Our most recent travels to Indonesia introduced us to eating star fruit leaves, coffee leaves, and even young mango leaves in cooking. We got to try a robusta coffee leaf sambal which inspired us since we have Kona coffee trees growing wild in our backyard. But you know what else grows wild in our backyard?! Mango trees!

While we didn't get a chance to taste the mango leaf curry during our travels, it was tucked into the backs of our minds to try. Big Island has prolific giant common mango trees growing wild across the whole island, we happen to have three on our property! They are quite the sight to see. We have a family of the cutest green parakeets that live in ours. When they take flight, their lime green wings light up the sky. When they perch in the trees they look like little mangoes, it is so cute. They are squawky though!

Tapping into True Abundance

Okay, so the thing about these giant common mango trees is that the mangos are small, kind of stringy, very tasty, but not actually the best "eating" mango. So when we started utilizing the mango leaves themselves, it felt like tapping into the Tao. Forever giving and never ending. True abundance.
To our surprise, or I suppose not so much a surprise since guava leaves taste like guava, mango leaves legit taste like a green mango! Each fruit has its own set of polyphenols, and this is part of what makes our vinegar so special. We brew from all sorts of fruits so you get a wider range in your diet than just eating apple cider vinegar.
As it turns out, tropical fruit leaves hold even MORE polyphenols than the fruits themselves. Wild! So naturally blending leaves into the finished fruit vinegar just layers more health benefits.
