🌸 Overview

Lacto-fermented papaya seeds and local turmeric blended with fruit vinegar, a dash of local honey, macadamia nuts and sea salt.

The seeds of papaya are known to be effective in killing worms and intestinal parasites that settle in the large or small intestines making this sauce absolutely delicious and simultaneously medicinal.

The macadamia gives this sauce a creaminess in addition to raw honey that complements the slight pepperiness of the papaya seeds. The Lacto-Fermentation of both the papaya seeds and local turmeric adds even more health benefits with additional probiotics while also mellowing the seeds astringency.

🌺 Story Behind the Batch

Our customers loooove our Ancient Roman Mustard Vinegar, but since mustard seeds are not local we wanted to find a creative alternative. That is when we came up with papaya seeds!! They have a similar warming effect as mustard, tons of health benefits, and are also a byproduct of papaya thus making this a zero waste product! Rather than discarding the seeds, we re-purposed them. 

We initially got inspiration for our mustard recipe from an ancient Roman version that blended pine nuts to give the sauce more body, and considering we are in Hawaii we all know what nut to use -- mac nuts!!! Our neighbors have a 3 acre orchard and ever since 2020 they have struggled to find buyers and labor for harvest... so we basically have an open invite for as many mac nuts as we could possibly dream of. They ask us to come take truck loads! Our biggest limitation is hand cracking them :). So that said, this sauce is made with a lot of love because each nut was hand picked and hand cracked!

Turmeric is what gives mustard its vibrant color and... well we have it growing fresh in our garden! This Papaya Seed sauce was just asking to be created. 

It is our mission to ferment as many of the ingredients we use to make sure we all get optimal digestion! Theses papaya seeds were lacto-fermented we salt that we gathered off the lava rocks. Gosh making vinegar is just so much fun cause its an excuse to create and play with plants! 

We have not made a batch of this in quite some time. The people at the farmers market used to demand that we keep it stocked, so lets all give a around of applause at the return of one of our most creative and beloved sauces!!!
